Methodology

In this study, we aimed to uncover the regions across the U.S. that boast the most diverse culinary offerings. To achieve this, we began by creating a comprehensive list of 235 restaurant categories derived from Google Business Profiles, each representing a unique regional, cultural, or ethnic cuisine. We then streamlined this list into 23 primary categories and analyzed the number of restaurants in the 200 largest cities in the country that fell under each category.

Once we determined the total number of restaurants in each city, we calculated a diversity index that considers both the variety of categories and their proportional representation. This index highlights cities that showcase a wide range of dining options, as well as those that balance representation across categories. We then scaled these scores from 0 to 100, where 100 signifies the highest level of diversity.

Our initial diversity index primarily featured larger cities, as it didn’t account for population sizes. To highlight smaller cities with vibrant and diverse restaurant scenes, we created a population-weighted diversity index. This new index divides the original diversity score by the logarithm of the city’s population and is adjusted on a scale from 0 to 100, allowing for a more balanced representation of culinary diversity across all city sizes.

Beyond exploring the vibrant variety of cuisines in cities across America, we aimed to identify the languages most closely linked to these culinary styles. To achieve this, we analyzed over two million reviews spanning 23 main categories.

Next, we compiled a list of over 50 keywords related to food, including terms like “delicious” and “tasty.” We analyzed reviews to count how often each keyword appeared, allowing us to identify the most frequently used descriptors. By dividing the mentions of each keyword by the total number of reviews for each cuisine, we uncovered the predominant language used to describe various types of food.
